The principles of Diet in Ayurveda embody simplicity.
We live in a modern age where we have access to virtually any food we want at any time of day. That may seem like simplicity, but it’s in fact convenience. Spending a few minutes reading the back of any food container will illustrate this with dozens of ingredients that many of us can not even pronounce.
When we are using food for Maintaining health, Ayurveda asks us to step back and stick to cooked, whole, and organic foods that are in season and eaten at certain times of the day.

When we are using food as a balancing principle in Ayurveda it can be a little more COMPLICATED. We choose foods that embody the opposing qualities that we are trying to balance. For example, if you suffer from inflammation which is heating you would choose foods that are cool and soothing in nature while avoid spicy and pungent foods.
Imbalances don’t have to be a full on disorder, an imbalance can be something as simple as a minor abnormality in your day. If you go for a run and feel a tad overheated you would not reach for a cup of hot tea when you return home. Of course not. A more logical choice would be cooling and hydrating coconut water.
Just like this, Ayurveda with its understanding of the qualities of all the things that surround us and it’s multi-modalities of breath work, yoga, and meditation teach us to be more in tune and aware of our own body so that we can give it exactly what it needs at any point in time. Just like an automobile when we maintain it the way it should be maintained we can drive it for years on end. Through proper diet, exercise, and stress reduction our own longevity and health increase.
